Design Story: Bouchon

Bouchon, Chef Thomas Keller's restaurant featuring traditional bistro-inspired cuisine, first opened in Yountville, California, in 1998. Bouchon in Beverly Hills, the latest iteration, opened in late November 2009. This will mark the third edition of Keller's classic French country fare and the premiere of Bar Bouchon, a French wine bar with an extensive wines-by-the-glass selection and small plate offerings. Bouchon in Beverly Hills joins the Thomas Keller Restaurant Group's other bistros, located in Yountville and Las Vegas. Chef Keller's other restaurants include The French Laundry, Per Se, Ad Hoc, and Bouchon Bakery.

The Viking Commercial kitchen at Bouchon in Beverly Hills was built to ensure perfect performance. The open design allows visual contact between chefs from any position in the kitchen. And of course, the heavy-duty construction of this versatile equipment can handle anything these chefs dish out. The kitchen was designed by Timothy Harrison of Harrison, Koellner, LLC, who has collaborated with Chef Keller on his other kitchens, including The French Laundry, Per Se, and the Bouchon restaurants. Bouchon in Beverly Hills is registered with the USGBC and LEED-Core & Shell certification.
